owners manual says premium plus dealer says opti-dfi what gives,also what water temp would be safe for break in,water around here is 41.

Correct Mercury change from the premium plus to DFI but can be used in a pinch !

Use DFI.As for water temp that is fine just make sure the engine temp is up before taking off. Idle for about 5 mins to reach 120 degrees.

Your dealer is CORRECT- see the following post:

Although it would be PREFERABLE to run in 60+ degree water temps... proper break-in can be accomplished at cooler water temps.
HIGHLY recommend you have a Smartcraft Instrument... set to read engine temp.
