I'm just a little curious to see if anyone as ever tried using composite wood to build a set of bunk boards. If it's possible, it seems like it would last forever. That combined with Line-X would seem like a smart move.

Composites do not have the tensile strength as real wood does. You have to run less distance between joists on a deck, so the distance betwwen the bunk board mounts is wayyyy to much for composite. Sounds good, but it is not a good idea.
the line-x part is not a good idea, it will tear up the hull very quickly if it comes in contact with it at all

Treated wood, then line x, then carpet might be the best option. No on the plastic as it has very little spanning integrity and will sag big time.
