ok-- straight knife, 3-4" drop-point, full tang, wood handle(but synthetic grips make more sense), tooled leather belt sheath. No gut hook for me unless its a 2" birdknife. That's in the field-- everyday, it's a 2-3" folder, half-serrated, assisted-opening Kershaw.
Gerber fixed blade Gator with serrations and gut hook.is my favorite.
I have an old Sears buck skinner knife that is very good too.
I use two... a Buck 5" Pathfinder fixed blade for gutting deer, and a 4" drop point lock blade for upland game as well as deer... I don't use a gut hook - never have.

I have the old original style Buck knife with black handle, fixed blade. Had it for almost 30 years now. It almost knows how to gut game on its own.![]()

Buck straight blade with gut hook full tang synthetic sure grip handle. Had it for over 10 years and hope to have it another 50.
my fave is my old timer folding hunter model. sharp enough to cut like a scapel.
at least thats what the ER doc said after installing me 10 stitches. wouldn't sell it for anything. my knife fave brand is Carl Schlieper german eye brand.
No joke, I must have 30 knives some collectors some common. My favorite one is a cheap folding knife with carbon steel blade. I pass this on a steel and then a ceramic steel a few times and you had better keep it away from anything you don't want cut.![]()

I let my wife gut/skin my deer with my case double X with the yellow handles, keep it razor sharp and when shes done with it I can still shave with itnow dont y'all wish your wives would clean your deer for ya

My normal "hunting knife" is a Swiss Army Knife. I've got a 3" Bucklite I carry when I'm squirrel hunting but seldom use. The SAK will do everything I need to do for small game and would probably do just fine on a deer.
When I do deer hunt, I've got a custom knife I had made by a fellow named Ben Shelor in Varina, Virginia over thirty-five years ago. It's what he called IIRC the "Alaskan Hunter." It's a basic simple knife, blade about 4" long, straight blade. Takes an edge like a razor and holds it. I don't know how many deer I've skinned with it over the years but it's a lot. I paid what then was a small fortune for it. About twice what I had paid for the shotgun I carried. :) Looking back at it now, it was a good investment. It's scratched and battle scared now, but I didn't buy it look at.
These two are my favorites, and I have a CRKT fixed blade with a drop point I use I paid $20 for that holds an edge forever...these two are custom built, pieces of art, but tough as an anvil and hold an edge like a razor!
