I am really wanting to try my hand at making a pork butt, but I do not own a smoker. Will it still turn out if I make it in the oven? Also, does anyone have any rubs or rub recipes they would recomend? Thanks

It will do just fine in the oven....try Head Country if you can find it. They carry it at Walmart around here. Don't be afraid to apply plenty.![]()

Oven will work fine and so will a regular gas or charcoal grill. If you're using a gas grill turn one side burner on and leave the other side off or on its lowest temp and place the butt on the cooler side and wood chips on the hot side. If charcoal then place your charcoal where there is a cooler side and a hotter side. You're basically using indirect heat to cook and smoke. For a pork rub I like the following:
Smoked paprika - 1/2 cup
Brown Sugar - 1/8 cup
Onion powder - 1 tablespoon
Garlic powder - 1 tablespoon
Salt 1 -teaspoon
Pepper - 1 tablespoon
Thats a basic number but I usually play around with the rub until it tastes right to me.

Or you can do it this way. Use a slow cooker. Put your rub on it the day before and when ready to cook--Put it in the slow cooker and cover with Coca cola. That is right Coke. Fill to just about totally covering the butt and cook on slow for about 6 to 8 hours. Depending on the weight of the butt. It is not the way I like to cook them but you talk about falling off the bone. Be careful when you lift it out because it will fall apart. Clean the slow cooker out--pull the pork and put back in the cooker and cover with your favorite BBQ sauce. This will warm the BBQ back up. Easy way to cook one.

Definitely a good way if you don't have access to a grill or smoker. We do this too and it is amazing just how tender the meat is. We do this and prior to putting it in the slow cooker I'll sear it on all sides in a big skillet and then throw it in and forget about it. I don't know of a bad way to cook a pork butt.

We use our crockpot to make our pulled pork, dont remember what we use for rub, the set it in the morn, come dinner time, good to go. I would advise if you are doing it in either the oven or crockpot to cut some of the fat off, otherwise by the time the shoulder is done, it will be swimming in fat. Dont cut all of it off, just some of it. The crockpot will help hold in the moisture.

Red Barron Butt Rub , yes you can cook a good but in the oven. After rubbing in the butt rub you'll need to rap it up in foal to keep from drying it out, set the oven at 250 F for about 4 to 6 hours. Check with meat thermometer to make sure it done.![]()

Man this sounds great,,,Only problem Ma and I are gettin so smoked meat tears us both up. Can I use my gas grill without the wood chips and just slow cook it with bbq sauce at the end ? Also about how long for each lb any ideas? thanks Joe
Joe, your gas grill should be fine. You would be better of doing it in the oven and saving the propane in my opinion though. Meat thermometer would be the best way to determine when it is done.

If you're looking to make pulled pork you want 190 minimum and I prefer 200 myself....you need to break down the connective tissue so it pulls easy.

+2, and on a smoker maintaining a temp of 235-250 you can expect about an 1-1.5 hours per pound of butt. In an oven wrapped in foil I would guess it would be a little less time

I do mine in the crock pot, but I don't use coke.
I season the butt up good with my own rub of kosher salt, black pepper, cayenne pepper, paprika, cumin, garlic powder, and red pepper flakes.
Then I slice up a couple of onions, and layer them on the bottom of the crockpot, and dice up a few cloves of garlic, and ad to the onions.
Place the butt in the crockpot fat side up.
I'll let it cook on low for 8-10 hours. The crockpot will be full of juice...pour the juice off. Shred the pork with a couple of forks, it'll fall right apart. Mix it up good with the onions and garlic. I'll then pour several good shakes of red wine vinegar in, turn it to high for about 15-20 minutes, then it's ready. My family likes to add sauce after it comes out of the crockpot, but personally I don't have a problem with adding the sauce to the crockpot about 15 minutes after the vinegar, then leaving it on high until the sauce is hot.
