You need a nice flank steak, big enough to cut a pocket into the middle. I start on one of the long side and slice it in the middle, leaving about an inch on the other 3 sides.
Saute 1/2 lb of your favorite sausage, hot and spicy or Italian. Drain off fat.
Add a package of stuffing mix, doesn't matter what flavor. Soften the stuffing with hot water. Remove from heat and add a cup of shredded parmesean or asiago cheese. Mix well and stuff the flank steak. I use a skewer to close the pocket of the flank steak.
Grill the steak about 10 minutes on each side or till cooked to your liking.
Slice across grain into sections, add steak sauce and enjoy.
