    fried parmesan chicken

    The kids love this.

    Take some boneless skinless chicken breast and cut into small strips. Get a bag of shredded parmesan cheese. NOT the kind in a shaker. lightly salt and pepper (parmesan is already kinda salty) and then roll the chicken in it making a good coating might have to mash it into the chicken to get to stick good. then fry it in olive oil. Use a nonstick skillet because it will try to stick. Let the chicken cook a few minutes on each side the cheese will brown and form a good crust. Let it crust before flipping it.

    My wife and I tried these last night. They had good flavor, but you definately need a nonstick pan to fry them in.
