well i prefer a good fried fish....however i have done this....(not with walleye though) I used white bass but i dont think it matters.
wrap your fillets in foil boats (if you know what i mean)
sprinkle lemon pepper on both sides
cut up some lemons and oranges and place them on the fish
close the foil boats slightly leaving room over the fish
put on a hot grill and cook, letting the juices cook into the fish..... serve.
This is for the grill:
Construct a makeshift baking pan from aluminum foil. Place 2 to 3 tablespoons of butter, margarine, or canola oil along with a little lemon juice and some white cooking wine and a grated clove of garlic. Place on hot grill to melt and consolidate ingredients.
Then take fillets and lighly dust both sides with Italian bread crumbs. Place fillets in foil pan and shake grated Parmesan cheese on top. Cook on grill to desired doneness and serve with a pasta and sauce side dish.![]()

Prepare you fillets, rinse and dry with paper towel, make a simple egg wash and then put them into finely crushed saltine crackers and lemon pepper fry in butter until golden brown and enjoy.......![]()
I like to take butter, lemon, lemon pepper, and a bit of salt. Sprinkle the fish with lemon pepper, slice of lemon on each fillet (or more if I feel like it), and a slice of butter all wrapped up in foil. Just toss them on the grill until the fish flakes.
