    New Casualty of Sorriness: Eggs

    The first Saturday of the month our lodge does a breakfast. We feed 250+ people. We normally get most of our food from Gordon's. Bacon, sausage, biscuits, eggs, etc. We got an e-mail yesterday from Gordon's, No Eggs this month.

    how do you know it’s a double yolk before you crack it?

    Yep the debate is always whether the Chicken or the Egg came first never recall Gordon's ever being a part of the Egg Making Process Discussion.

    We buy what I call Commercial Eggs. It's the same thing Hardees uses. They come in a pint milk jug premixed with milk. There are about 18 eggs in a jug.

    Roosterman will verify this: The eggs you buy in the store and crack are graded. They all say "Grade A" or some such on the package. Further they come in Large and Extra Large. Chickens lay eggs of all sizes, double yokes, deformed, cracked shells, whatever. The culls go to what I call commercial eggs. That's what they were called 30 years ago when I was at UT. They are cracked, pasteurized and mixed with milk and packaged in milk cartons for use in restaurants. They also sell them to bakeries and other commercial places.

    We go through about 2.5 cases of these egg cartons. There are 15 cartons to a case. That would be about 720 cracked eggs. Or 60 dozen.

    This breakfast has developed into a busy busy mess. It started out with 2 electric skillets and 2 electric griddles. We now run the 2 electric skillets, 3 Blackstones, 2 high pressure camp stoves, have a buffet bar, and heavy duty coffee machines. The only reason we don't have 4 Blackstones now is we don't have enough people to run what we have. We cook about 45 pounds of bacon, 45 pounds of sausage, 12 pounds of fried bologna, about 30 pounds of pork tenderloin, 300 biscuits, around 200 pancakes, 50 pounds of hash browns.

    Having to crack eggs v's shake and pour the mix in a skillet would involve needing 2 more guys and more time. At times I have 3 skillets on the camp stoves with 2 jugs of eggs in each at the same time.

    We buy through Gordon's. We depend on them to have what we need. There are other commercial food peddlers but they don't give you much respect when you are buying from someone else and suddenly you need them because your supplier can't come through.

    The have a procedure called Candaling as the eggs pass over a light then you can see the inner contents of the egg it's used in Hatchery Operations and Quality Control in Egg Producing Facilities

    This is like my workplaces biggest customer expecting us to have inventory when we are a distributor. We don't make the stuff, depend on manfacturers to produce it.

    Gordon's is the same. Sucks but not much you can do.
