I have a 2005 285 with 150 optimax. The Prop is a 25p tempest the boat has a good hole shot and a top end of 62.7 mph gps at 5100 rpm. Just wondering what I could expect if installed a 6" manual jack plate. Would I lose my hole shot? Would my rpms go up or down? This is my first bass boat and any help would be appriciated.

Too much prop for now. You need the plate...it won't hurt the holeshot. You can run the 25 after the plate but will probably need a 23 Tempest and at most a 24.
Try a 24 fury or a 25 if you can. I was pleased with mine
Cob, I tried both a 6" & 8" & my boat performed better all the way around with the 8"Better smooter ride & more lift & no catching water when coming off of plane. Cousin has a 6" on his 285 & the smoother lifting & not catching is the only difference that I see. His boat lifts very well & performs exceptionally with it. 66.8 mph @5300 rpm, 175 Johnson & 24 Raker original with full tank, two 200lb. men & heavy tournament load
