Need setup help for 97 ZX202C...

I'm on the Arizona State University Bass Fishing Team, and one of my buddies/team mates just picked up a 97 ZX202C with a 200 Yamaha Pro-V that has the Hydrotech Stage 1 Kit putting it to 248hp, and a 10 inch manual jackplate. He is turning a 26 pitch Ballistic 3 blade and is only getting 60mph out of his boat. He is also only turning 5700 RPMs.

First, what should we start at for prop height? Also, what prop would be better suited for this setup? We fish Arizona desert lakes, at elevations from around 500-4000 feet.

Yamaha 25m, 2 1/2 in below pad...good starting point.

I've got the same boat but with the stock yamaha 200. I use a 25m prop and run 66 at 5400 rpm's. 2 3/4 below pad. I need to change something to get my rpm's up.
