What set up seems to run best on these boats. What size jack plate, prop, height, I am running a 27 fury now with 18 inches of set back it was set up this way when i bought it.

18 inches seems like quite a bit of setback.
I was wrong I thought it was a 6" and a 12" jack plate. Its a 10" and a 5 1/2" bolted together for 15 1/2" still seems like a lot to me.
How is it running the way it is set up now?

Trimmed right at half way turning about 5200 rpm I am running 68 to 70 gps and it starts to walk pretty good. If I trim it above the halfway point walk starts much sooner and it throws one heck of a rooster tail.

Well I have a question, are you expecting it not to walk and/or expecting to set it up to not walk???? I do not own a Bee nor have I ever been in one but they look like a boat that will fly and walk. seems like too much setback also!
The walk is probably normal for that boat, but your just gonna have to learn to control it, thats what I did with my triton. When I learned how to drive it my triton it did not walk anymore. Sounds like to me you got some more trim left but may be a little reluctant because of the walk. Some seat time and u will slowly get the hang of it and start trimming up more and you will have an epiphany once you finally get it. It will be Amazing!!!! It took me about 6 hours of straight driving time to learn how to control my tritons walk. I did it with nothing in the boat but me and light fuel each time I went out. The way I look at it is if you can learn how to drive it with the boat in it's lightest, fastest state then you can drive it anytime.
The rooster tail may clear up if you trim it all the way out, im not sure. A large rooster tail is not good for performance so you definately want that thing smaller and the trim may clear it up once you get her trimmed all the way out, if not im not sure what to tell you. Good luck![]()
I haven't measured the prop height yet I will try to get that tomorrow.

That's exactly what it is I know its gonna take seat time but just wanted to get a Idea of what overall set up works the best on these boats.
You should be running in the 70's with that motor and boat. Your RPM's seem pretty low. Is the nose lifting pretty good out of the water or is it running flat? You could have the motor set to high. Measure the prop to pad and post what you get.
This boat should probably run between 78 and 81 depending on setup and how it's loaded.

14-16" is ok and used quite a bit on old BEE's.
Typically, most folks try to run the engine too high on the Bee Setup. Lower the engine and see if performance improves.
OK i measured prop to pad and I came up with 3 5/8.
I would not mess with any of the setup until I got use to controlling the walk and started trimming out all the way. The guy you bought the boat from probably had that thing set up to be a rocket and I would want to find out before I started messing with stuff. Spend some time and learn to control the walk and trim her up and you may be doing 80 before you know it @ 5800 RPMs and if that is the case I would not change naything.
When i bought my triton I almost didnt because I could not drive it, the damn thing was all over the place and it scared the hell out of me. The guy told me it is setup right just gotta learn to drive it, so I finally did and the boat would run really well with the right RPMs. I never even once adjusted jackplate or changed props and I had it for 3 years. I was setup perfect. Just Sayin![]()

The Bee will run its best numbers with 16 inches of set back. Really not bad to drive at all. Not as easy as a stroker probably almost the same as a bullet

Went out today and was able to tame the chine walk a little. I was able to control it really well between 65 to 73 trimmed all the way up rooster tail was about the top of the motor. I got brave one time and was able to run 78.67 Gps at about 5600 Rpm before I let off.

sounds like you are set up right, you just need more seat time.
Hey BEE........................ I Hate to say it but I TOLD YOU SO!!!!!!! Dude you are gonna be a badazz boat driver when u tame that wild beast.![]()
