I was thinking of doing the same thing, but didn't know if it needed to match up in some way, or if all steering wheels are made the same.

Here's one I put on my 2000 191 about 3 years ago or so. Got it from Great Lakes Skipper. It's a little closer to me than the original one was.
Just Got this one off ebay, $50.00
When you buy a replacement, make sure it comes with the new Hub,
3/4" tapered shaft (1" per foot taper)
