Temp on 2001 225 hp Ficht

Good morning...I noticed that when idling temp rises to about 140 maybe more but the second I get on the throttle temp goes so low it does not even register on the gauge. My guess is that there might be no t-stats in the motor. It was a used motor that I purchased. Is it difficult to look to see if there are truly t-stats in the motor. FYI the water temp i was running in was about 75 degrees.

Either no stats or stuck open. Would be worth checking and changing in my opinion.
