My new boat came equipped with an Interstate battery (800 CC Amps). This battery is also running a Lowrance HDS 8&10. Is this a little light on the CC Amps?

I would say any group 31 battery is the desired battery to meet all your cranking and accessory power needs. Don posted a recommended/approved battery list pinned above. I have a 31 diehard platinum and it hasn't failed yet.
as long as it is the 27m-xhd or bigger you should be good.
I believe 800 cca equals 1000 mca meeting the required for your motor. Everyones going to say you need an agm battery ...I have been running a lead acid with no problems with excessive electronics
This battery BARELY meets the minimum specification for your engine ONLY.
Hence, if you run your power-hungry electronics for any period of time, you are BOUND to run into low voltage problems sooner or later (and these problems will likely show up on the day you find that sweet spot, fish it for hours, and fill your livewells with what you hope to be the winning fish).
