Buddy anfd i are going from NJ to SC. Should we stop every so often and regrease the bearings in the trailer? I don't mean a ful repacking, but shooting some grease in the bearings?

If you repacked the bearing and all looked good at the time, then you will be fine. The only time you need to re-grease, is if you are loosing grease somewhere, you don't just use up grease like you do gasoline.
Over greasing is bad, you will blow out your rear seal or your bearing buddy seals. I pack my bearings, shoot grease in the buddies til they are pushed out a little and then I don't touch them until I clean and repack the bearings the next time.
Ditto - Overgreasing bad. Would not add any unless the bearing buddies are sucked in quite a ways. If you do add, if they bearing buddy comes out a little, you are done. You just need a little spring pressure to keep the water out.
