    Crockpot Reuben Dip

    One of my co workers gave me this recipe, if you like Reuben sandwiches, you should like this and it's easy. I served it with cut up bread and triscuit crackers.

    * 1 (16 ounce) jar sauerkraut, drained (I used canned)
    * 1 (8 ounce) package cream cheese, softened
    * 2 cups shredded Swiss cheese
    * 2 cups shredded cooked corned beef
    * 1/4 cup thousand island dressing (I added to taste)

    In a slow cooker, combine the sauerkraut, cream cheese, Swiss cheese, corned beef and thousand island dressing. Cover, and cook on high for 45 minutes if you're in a hurry, low for longer if you're not, or just until hot and cheese is melted. Stir occasionally while cooking.

    I'm going to have to try this. It sounds awesome for those of us that love reuben sandwiches. I'm guessing some rye bread toast points would be great with this.

    We use the small rye rounds (about the size of a half dollar) toasted in the oven till slightly crisp. Easy to dip and delicious.

    Wife makes this and it is GOOD. She gets the small sized "dark rye party bread" MMMMMMMMMMMMMM GOOOOOOOOOOOOOOOOOD

    What kind of corned beef do you use? Are you using deli meat, canned, or something else? Sounds good.

    We just go to the deli and have them slice us a slab about 1/2" Just use your judgement depending on size of round in the deli case. With that said we mix and bake ours in a casserole dish covered until warm and bubbly. From oven to table, one less thing to clean.

    I just made this exact recipe last week. I liked it but after a day or so......it got to be too heavy. Hope you have enough people to polish it off in one outing.
