I really don't use a recipe per se - I cook chili by taste, and I do experiment a bit. My basic recipe is:
At least 3# Beef or venison (I prefer steak or roast cut into cubes, but hamburger will work)
2 cans Rotel tomatoes - how hot is up to you
1 can of stewed tomatoes - a little sugar adds a lot of flavor
beer and/or wine... I've found that wild game always turns out better when you add alcohol to the dish.
2-3 cans red, black, or a combo of beans - chili beans are good to add, especially if they are already seasoned
garlic
onion
Tony Chachere's seasoning
yellow mustard and/or a good mustard based BBQ sauce
Worcestershire sauce
Chili powder
salt and pepper
serrano, chile or jalapeno peppers
and anything else that you think will add to the flavor
Optional
Horseradish
Potatoes
I want to try pickled jalapenos for a different flavor
smoke
chocolate - not sweet, but unsweetened cocoa
Sorry I can't help more, but I am prone to tweaking the recipe, so I can't be a whole lot more specific. Quantities of each ingredient are based on the amount you want to cook.The recipe in the lounge is a good start - don't be afraid to experiment.
