Spicy Asian BBQ Chicken
1/4 Cup Packed Brown Sugar
1/4 Cup Soy Sauce
1 Tbsp Fresh Lime Juice
1/2 Tsp Crushed Red Pepper Flakes
1/4 Tsp Curry Powder
3 Garlic Cloves, minced
8 (6 ounce) Chicken Thighs or Breasts (skin on)
Cooking Spray
Lime Wedges, optional
Green Onion Tops, optional
Combine first 6 ingredients in a large ziploc plastic bag and add chicken. Seal and marinade in refrigerator overnight, turning occasionally.
Prepare grill.
Remove chicken from bag, reserving marinade. Place marinade in a small saucepan. Bring to a boil and cook 1 minute.
Place chicken on grill rack coated with cooking spray and cook over indirect heat for approximately one hour. Turn and baste frequently with cooked marinade.
Garnish with lime wedges and green onion tops.
TIPS: If cooking 5 pounds of chicken you will need to double marinade recipe. I strongly recommend not to cut the "marinating" time - it needs a full 8 hours for the marinade to permeate the meat. I used a gas grill and held a steady 300 degrees.
