    Winter Soups!!!

    here is one I love, I usually add more bacon, this is sooooo good!
    called Ranch potato bacon soup

    6 slices bacon:diced
    1 medium onion:chopped
    5 large potatpes: peeled,diced in small cubes
    4 cups milk
    4 cups chicken broth
    1 tsp salt
    dash pepper
    3 tbs powdered ranch dressing mix
    1 cup sour cream
    3 tbs flour

    Fry bacon until crisp in a soup pot over med heat. Remove with a slotted spoon and set aside bacon. Satue onion in the bacon fat until softened. Add potatoes and broth. Cover and simmer until potatoes are tender, 15 to 20 minutes. Mash about half the potatoes in the pot with a potatoe masher to help thicken the soup. Add milk,salt,pepper and the ranch dressing mix. Heat through. Return bacon to pot. remove from heat. Wisk together the sour cream and the flour. Stir sour cream mixture into the soup. Heat gently but do not boil or the sour cream will separate.

    OR...

    1 can chicken broth
    1 can cream of celery soup
    1 can cream of chicken soup
    16 oz. Velvetta cheese
    1 cup water
    1 large onion (fist sized) chopped
    4 cups red diced potatoes (w/peels opt.)
    1 lb. Jimmy Dean sausage
    Salt and pepper to taste

    Crumble and brown sausage. Drain. Combine can of broth, water, onions, potatoes and sausage. Simmer for 30 mins. Add milk, cheese and soups. Simmer until soups are dissolved and cheese is melted.

    Try this one:

    1 lb chicken cubed
    1 Pkg Lipton's Spanish rice
    1 can diced tomatoes
    1/2 onion
    1 jalapeno diced
    2 tblsp butter
    season salt
    chili powder
    pepper
    garlic powder
    1 pkg ranch seasoning
    1 pkg taco seasoning
    3 chicken bullion cubes
    6-8 cups water

    Sweat onions and jalapeno in butter, add chicken and season with salt, chili powder, garlic powder and pepper.
    when chicken is cooked add taco seasoning and Ranch packet.
    Add water, diced tomatoes and bring to boil, add bullion cubes.
    stir in Lipton Rice packet, cover and simmer for 10 minutes.

    Serve over tortilla chips. Top with cheese, salsa, sour cream etc...
    We also add some frozen corn right before serving. This recipe is just a guideline, you may want to add or subtract as you wish.
