I can't take credit for this as it was posted on the Texas Fishing Forum by a gentleman named redfin and the picture is by nascarchuck. Enjoy as they are VERY good.
Ingredients:
* 16 large whole jalepenos (topped, split lengthwise in 2 pieces, de-seeded). The more skin you scrape away from the inside wall of the core, the less hot it will be.
* 1 lb. of bacon (Wrights maple flavored thick sliced)
* 1 brick Creamed Cheese
* 1/4 to 1/2 cup olives
* One big handful of cocktail smokies
* 2 tbsp minced onion flakes (or finely chopped white onion)
Cooking Instructions:
After the peppers are prepared, put them on a paper towel to dry. Allow the creamed cheese to soften. Combine the cocktail smokies, olives and onion flakes in the food processor and chop it to the consistency of cooked ground beef. Then put that and the creamed cheese in a bowl and mix it well together (doing this in the food processor will only make a huge mess!). Use this mix to stuff each half of the pepper and press the halves together. Wrap the re-assembled jalepeno with a strip of bacon and hold it in place with a toothpick stuck all the way through. Cook in the smoker at 225° for about 45-mins on the center rack so the bacon grease won't catch fire. Put aluminum foil on the bottom of the smoking chamber to catch the bacon grease. I would suggest NOT cooking these in the oven as a bacon grease fire could occur. You can also cook these on the grill but use aluminum foil between the coals and the bacon to catch the grease and prevent a fire.
If you are really brave, finely chop and mix in a habanero pepper or two and stir into the mix - these are called Atomic Dragon Turds.
The stuffing is limited only by your imagination - Mexican 3 cheese mixed with the creamed cheese is an option. Mix in things like crabmeat or some cooked sausage meat, pimento olives, mushroom pieces, etc. Use your imagination.
