A favorite of my wife and Very healthy.
3-4 chix breasts
3 bell peppers. I use 1 red, 1 orange and 1 yellow (the sweetest)
1tbsp minced garlic
enough olive oil in the pan to keep from sticking.
Chicken seasoning
Coat chicken wiht your seasoning (I LOVE Cavenders Greek Seasoning in the yellow can)
remove seeds and stem of peppers and slice in to think lengthwise strips.
heat pan and sizzle garlic in oil for a brief minute. add Chicken and cook on each side but not al the way thru yet.
add peppers on top of chicken after turning it once. put on lid and cook till chicken is done but not dry.
Serve over Yellow Saffron rice with a green veggie of choice. we had broccoli but Asparagus is good too.
Dont forget to drizzle the juice left in the skillet over the mea.
