A 4-6 hours depending on how big the pot is and how much is in it, we use stew meat instead of ground beef and let it simmer till it the meat falls apart, then add the beans.

+1, what HSB said. I have both cooked in Chili Competitions (and done well!) and I make chili weekly for the restaurant I manage. Use stew meat (or cut up a sirloin butt into 1 inch cubes), brown it first in oil, and put in your stock (whatever liquid you use) and let it simmer, and simmer some more! I actually make a slurry of spices that I stir into the browned meat prior to adding the simmering liquid. When your done with the simmer, add your beans and tomatoes if you use 'em. For my simmering liquid I use beef stock and a couple of amber beers. Can't beat it!![]()
We just use beef broth, but I bet a can o' guiness in there would be quite tasty or any good brown ale.

I start my chili in the morning by browning 2 lbs of burger and adding it to the rest of the ingredients in the crockpot. I slow cook the chili all day on low setting only opening the lid to stir it occasionally (2-3 times) during the day.
I start mine as early in the day as I can. Simillarly to the other folks I like to let it simmer all day.
