    smoking a whole ham

    I am looking to try my first attempt using my new smoker. It is an electric smoker. Does anyone know where I can find good a good recipe and instructions for smoking a whole ham? I also want to find recipes for smoking other things like salmon and cheese.

    The first problem is finding an uncooked ham. Most in stores are pre cooked. There are all kinds of sites with good tips. I have never tried a ham, put many successful ribs, briskets and poultry. There are some other things to consider, is your smoker a electric water smoker, or indirect heat. I think you need indirect heat for cheese, and work better for fish. IMO Good luck.

    Rob, I've been smoking cheese for 30 years..need "cold smoke"..need to know what kind of smoker you got

    You can check with your local meat market for the raw ham, they can usually get you one fairly cheal too!

    I have the same smoker and yes it wont work for smoking cheese if you use the electric heating element. I think the lowest the temp control goes is 100F.

    What I do to smoke in that smoker is the following:

    -take the water pan and fill it with ice
    -get a metal coffee can and put 2 charcoals briquettes in it, and get them going
    -I then put the whole coffee can right in the smoker, and add soaked wood chips to the coffee can periodically.
    - you want to maintain the temps at around 80F max or so for cheese, so you have to watch it closely u can open the door or add coals accordingly.
    - one more tip it help to do it on a cold day, it will be easier to keep the temps down.

    Aren't "picnic hams" uncooked?? Maybe try that..I see these in stores all over town...

    You have to get a "Little Chief" or "Big Chief"...it's a "cold" smoker...doesn't cook food, just gives a great flavor before you cook it.....bacon is awesome! They sell the powdered wood, hickory, apple etc.....buy a 5 pound block of unsliced American cheese and cut it into eight blocks...find a restaurant supply place, cheaper....can't do this when it's hot out...put 'em in the smoker and be prepared to babysit for a few hours, have to rotate 'em up an down and keep flipping until they form the awesome crust...if you forget, they'll break and run all over the place...usually takes about three trays of wood, I'll like to mix hickory and cherry..I've been doing this for 30 years and it's the best smoked cheese ever...not the brushed on liquid smoke crap you buy in the grocery store
