Here's a quick and easy recipe that is very simple and thats the beauty of it. It is also VERY healthy as nothing is fried at all. The ingredients really bring out the taste in one another. I normally use chicken cause its easy. You can substitute just about any meat. This will feed approx: 4 adults so just increase ingredients as needed for more people.
4 boneless, skinless chicken breasts
2-3 medium ripe avocados
3-5 Roma tomatos
1 small bunch of fresh cilantro
3 limes
2 lemons
1 package corn tortillas
Grated sharp cheddar cheese as desired
Trim fat off chicken breasts, season with fajita seasoning or lemon pepper. Place on grill and cook fully. Squeeze juice of 1 lemon and 1 lime on chicken breasts while cooking.
Cut tomatos into chunks, peel and cut avocados into equal sized chunks as tomatos. Chop cilantro finely. Add all three together(amount of cilantro to your taste) in bowl and let sit while chicken continues to grill. Squeeze juice from remaining lemon/limes into tomato/avocado salsa mix.
Once chicken is done either shred or cut into small cubes in bowl.
Heat up tortillas and leave them in tortilla warmer.
To serve simply combine the chicken with the salsa on a tortilla and add a small amount of cheese.
