Cut salmon fillet in serving size portions
Soak salmon pieces in milk in fridge for 20-30 minutes.
Mix up the dredge:

1 c corn meal
salt & pepper to taste (1/2 tsp each is a good starting point)
Garlic powder optional (I use it, some prefer not to) to taste (I go with about 1/4 - 1/2 tsp.

When salmon had finished its soak drain the milk off and discard, lightly pat the pieces with a paper towel to remove the majority of the moisture. Dredge the samon in the corn meal and place on small plate, cover with plastic wrap and refrigerate for about 10 more minutes. This will help the coating set.

Pan fry the salmon in medium hot/hot corn oil. Cook till golden brown (about 3-5 minutes per side.
