I'm looking for a potato salad recipe to go with gumbo. I haven't found that perfect recipe. I know it's a "touch" thing with both gumbo and the potato salad but a tried and true recipe won't hurt. I like that creamy potato salad with my gumbo. Feel free to add some gumbo recipes too!

There are about 11 million variations to potato salad round here....
I usually make mine by tate only...using some main ingredients....
Potatoes
Eggs (preferably yard eggs)
mayo
mustard
tony's
Don't sound like much, but the wife doesn't like the onions and pickles in it....and can't say that I do too...I think the main thing is putting enough mayo in it, and enough tony's....
Boil potatos....Usually 6 large red potatoes cut up
6-8 boiled eggs....mashed with fork until fine
couple big spoonfuls of mayo
quick squirt of mustard
mix it all up.....taste it...if it needs more mayo, by golly, add it....don't forget tonys'.......it can get too much pretty easy, but also very easy to not put enough....
Its really a taste thing....taste it and add until it tastes right....you can add dices onions and pickle relish to it once you get the flavor you want....I do that at the fire station.....they like the onions....
On the gumbo..............you can use whatever you want...whatever kind of seafood or meat....veggies....whatever......what will either make it taste good or not is cooking a good roux before hand....it will make or break it.....a good dark roux, and make sure to put enough in it so you know it is gumbo and not soup....
