I have done tons of these, as well as turkeys on my split-barrel grill. I tend to use the standard spices, but first, I drink the beer. Then fill the can about half way up with some cheap, sweet white wine. (or pour into the cavity of a turkey breast side up) As the sugar in the wine breaks down, it gets absorbed into the meat. It's awesome.
Not really a answer to your question, but I've heard of people using Dr. Pepper or Root Beer as a substute for beer.
I've used:
1) Lemonade / Orange juice concentrate mixture in liquid, with orange peel and lemon peel Mrs. Dash Lemon Pepper for a rub (along with lemondade & OJ). Smoke from Orange pellets in the smoker drawer.
2) Cherry (maraschino) in the liquid, basted with all sorts of Mrs. Dash spices, and used a lot of cherry wood during the grilling!!
I've got a Holland grille and it only takes 45 minutes for 2 large chickens. (1.5 hours for a 14.5 lbs. turkey)
Never had juicier poultry!!![]()
