Think a couple guys at the rally liked these, so here it is.....
Keep in mind that this makes an awful lot, so adjust to fit your needs....also, very few coonasses measure anything, so bear with me on that....
You will need:
15 baking potatoes
1 med. tub of butter (3 pound I think)
1 large sour cream
2 pounds bacon
1 bunch green onions
2 bags cheddar cheese
Salt
pepper
Bake the potatoes just as you normally would, until tender. Remove the skin place in very large bowl. Using a masher, mash them. to them, add almost the whole tub of butter, the whole container of sour cream, the bunch of green onions, chopped, 1 bag of cheddar cheese, the two pounds of bacon that have been fried crispy, and crushed, and salt and pepper....keep in mind that potatoes soak up salt quite a bit...season well! You will want to taste as you go...if it needs more butter, put it! If it needs more salt and pepper, then by golly, put it too!!!!! Once you have it tasting like you want it, put it in a casserole dish, even it out, and spread the remaining bag of cheese over it (may not take the whole bag). bake at 350 degrees for around 15 minutes or until cheese is melted....voila....too simple a dish not to cook it!
