Fish quite a few limited HP and electric motor only lakes. Considering adding a Torqeedo to the transom. Has anyone done this - or what is your setup for limited lakes?
I am looking for more speed and power especially when there is some wind.

The ones I've seen aren't very powerful, maybe 2hp max. Other than having their own separate batteries, I doubt there's be much gain over using a 24v TM
You would be much much better off installing a 36 volt trolling motor for all electric.
For limited HP... IF THE 36 volt is not enough, add a gas kicker.
