Falcon, Amistad, or Choke Canyon

Me and a few guys from work are planning a trip to Texas between Feb and April 2011. We are looking to catch and release quality fish. We have plenty of fish here in La. but nothing like you guys have in Tx.

We are looking for advise on which lake would provide us with the best opportunity for quality fish, which month would be best and why.

Any info on hotels or cabins on the lakes would be helpful.
