Would bad relays cause the trim motor to start and run by itself and not turn off? Or is my boat haunted?

More likely one of the switches! The one on the motor, the shift leaver, on the steering column or the one on the bow. Disconnect one at a time until you find the bad one.

The reason I think it's the relays is, last time I was out the trim started down automatcally. To stop it from running I had to hold the up buttom, this worked on both the steering wheel and the motor (the one on lever is already disconnected). I had my partner hold the up button while I removed the cowling and the relay cover and when I tapped the relay on the right it stopped running by itself and went back to normal operation.
Note: when I was holding the up button, the trim motor would stop running by itself but not trim up.
Any ideas?
If you think it is the relay then swap them and it should make it start running in the other direction. The way you describe it it does still sound like a bad switch. Good Luck.

Thanks Dan, I'll try that out.
Sounds like the same thing that happened to mine. It turned out to be the trim switch on the motor.
