I made some side ribs the other day.
Smoked using cherry and oak.
Wrapped in foil at around 175. Took it to 198 opened the foil and smoked for another 10 min.
Total cook time was just over 4...

The biggest difference in the different types of wood (that is most noticeable) is the colouring of the meat the smoke imparts.
