I had 360 and went with a 34 for forward and 32 for perspective. Prefer prospective as I can see what is happening instead of what happened. Also see structure fine in perspective.

I do it. My second boat is a Triton 175 Sport aluminum that I use for some ABA tourneys and river fishing. I bought 2 cradles so I can just swap my 126sv units over.

Have you tried to point it off center when doing bow offset to see where the pedal ends up?
Here are my real world numbers going from a Merc 250 Opti on a 2001 Nitro 911 CDC at 74 MPH to a 300R with Torque Master lower at 82 MPH.
I have 2 also, one mounted under drivers console and the second on the side of the center locker as far back as the cable would reach.
I use the cotter clip/hitch pin clip more for the security from theft. If I'm stopping at a convenience store or similar it makes it harder for someone to just pop one out of the cradle and steal it.
Horsepower discrimination is real! I too don't understand why they don't just go by what the plate on the boat says.

I was thinking it did. When I ran Humminbird I could see N2K through ethernet.
I have a N2K backbone under the console with one leg connected to a Smart craft gauge, another to a SteadyCast and a third to my 126SV. I am able to see the N2K stuff on my bow units via Ethernet.
Perspective mode shows me where the fish are from left to right in addition to depth in the water column with forward mode. When I captured this screen image forward mode was only showing four fish...

On a 126sv there is a record sonar option on the menu but there isn't any way to playback the file even on the unit itself. I think there used to be an app called HomePort that would but no longer...
I buy tinned ring connectors sized for the wire gauge I'm running. I then use a quality crimper and marine grade heat shrink with adhesive. I connect them using a buss bar like these.
