I have another question. I recently installed a omc 5.5" jackplate. Should I move the winch post up more to compensate for the jackplate?

You're very clear in describing the spring on bow stop assy. This could be a long shot, but give the folks at C&O Marine a call. They carry massive amounts of OEM parts for Stratos & Javelin boats. Mine post is the same as yours. I had a weak spring that would allow you to drive past the roller without even noticing the "bump". I put a very heavy spring on it that doesn't hang down all the time. My post is virtually a solid position now and I haven't had any clearance issues when driving up on the trailer. I never understood this type of post unless it is for very steep ramps but another thought would be to not put the trailer as deep in the water so that it can't smack the roller with the tm. Then you can get out hook up and have the partner back it down just a tad (if needed) to crank it the rest of the way up.

I removed the spring and installed a 1/4" thick flat bar across the span under the strap. Inexpensive, easy and never had another worry about driving the boat over the winch mount.

It was used because all of the older Stratos boats had the OMC trolling motors and they hung out over the bow far enough to hit the bow stop when it came off the trailer... This would damage the trolling motor, so thus the spring loaded stop...
It is a pretty crappy design...
Shazer, It sounds like you are either putting the trailer in too far, so the bow does not raise up enough before it hits the stop, or the stop is not mounted in the right place...The spring is used to pull the roller all the way up, so if your spring is too short, it would hold the roller up against the stops tight...If you are still hitting the roller, you should try to put the trailer in shallower before putting the boat on the trailer and see if this helps...

That makes sense but on my 278 it doesn't seem to be a problem. I can see that you could smack the TM if you put the trailer in to deep when trying to load up. http://www.bassboatcentral.com/boardstuff2/beers.gif
