Hi with a boat that old I would pull each wiring panel and clean with steel wool the spade connectors and put a dab of (Copper Shield made by Thomas & Betts) do this to the fuel gauge also.
The sending unit is on the top of the tank and is very easy to replace, but first clean the connections on the gauge.
Look for any large cracks around the transom or under the boat.

The guys here will help with most of your questions, but I can answer one...Unless you can find the same brand/model of fishfinder with identical connectors, the connections are not going to be compatible with newer models...
If you do get a new finder, get one which has the transducer which can be glassed into the bilge. No holes to drill!

Take a good long look at the bottom of the boat. Make sure there are no cracks or chips missing. My 1995 has plenty of them and it will cost more to repair than the boat is worth.

A 184 with a tandem trailer. Unusual.
Check the transom, carefully. The front panel being questionable probably means the plastic holder on it has gotten brittle and is one push away from cracking completely. Those are no longer available and anything you replace it with will have to be free form made by you.
If that's a single tank model the sending unit on the tank should be accessible from the engine compartment without pulling the tank. Looks like the gauges are new, at least not stock. A couple switches have been replaced. Check the wiring connections for corrosion.
