Are you getting this temp reading from a Smartcraft Instrument?
Water pressure and RPM when this occurs?

SN# 1B010683 . The flashing check engine is from Smartcraft gauge. It is running about 650 Rpm's when it happens and the water pressure is showing about 4 or 5 psi on the warer pressure gauge.

I would recommend that you have the engine connected to the Computer Diagnostic System, and request a PRINTOUT of the "Freeze Frame (FAULT) History".
This history will provide the most accurate "clues" as to what the cause of your overheating condition is.
Likely causes:
-Water Pump
-Thermostats
-Poppet Valve
-Restricted telltale fitting
-Resistricted Air Compressor Strainer
