In colder water conditions, this would be considered NORMAL.
At idle speed, engine temperature and water flow are controlled by the THERMOSTATS.
Once you accelerate and water pressure increases, the POPPET VALVE controls water flow and pressure (essentially providing "wide open flow" of coolant (without thermostatic control).
When you return to idle speed.... the thermostats again take over, controlling engine temp. http://www.bassboatcentral.com/smileys/wink.gif
