Best way to cook a salmon filet is to grill it on a cedar plank. You can do a google search on cedar plank salmon recipes and find a ton of them.

Trout, Just Clean, Dredge in flour sautee in clarified butter or oil. Finish with burre blanc and toss some blanched almonds on.
