I have found the same stuff that works for me in the summer works in the winter too. Jerkbaits are a bit better when it's cold and clear, jig bites are soft but have a big fish attached, most soft plastic baits require no wind and watching the line.. don't expect a thump, it just does happen for me that many times. Shakey head and jigs on drop offs. Last year I was able to see them on the sonar in 14-18' of water then back off and catch them.
For schools and packs, fishing the holes in creek bends down deep with a rig. Feel the weight of the fish on the end, then set the hook.
Mostly, I fish the same shallower waters I would fish in the late spring thru fall, only much slower. Jerkbaits, crankbaits, and plastics. When you feel the dead weight, set the hook.
Sleeping in is also a good technique, no need to get there as the sun rises. Afternoons are usually better for me this time of year.
