In process of doing my 100 hr service & the lower unit oil looks like honey mustard. Oil coming out seems to be normal viscosity, it’s not thin. Does Yamaha run some kind of break in oil from factory?

Water intrusion
Yes, looks like water. There's a thread on here titled "SHO gear oil on floor" where YAM911 explains the issue with drain bolt gasket torque. Possibly happened at your 20 hour service...
I thing with these new improved [cough, cough] black gaskets, we will be seeing this more and more. That lower plug sees 40-50psi+ on the outside wanting in and just because it doesn't leak out doesn't mean it is not letting water in. CJ
Gear lube should be changed every year regardless . That way you can keep an eye on the gear lube condition . All marine gear lube can still protect the gears and bearings with Some water intrusion.

Aside from the color of the oil, the magnet appears to show more metal than normal on it.
Sir, you have an issue there.
Looks like water to me. I always send it off to Blackstone and have it tested. I keep the results in a file to prove to any dealer of problems. It is getting more common for dealers to deny claims and claim that the owner is at fault.
