I must be doing something wrong. My base maps on the unit are just geometric interpretations of the lakes with no depth. Like the Navionics app before the lake is fully downloaded. What the heck am I doing wrong?

Make sure you do indeed have the Lowrance Mapping. Then on map source select Lowrance. If at one time that unit was set up to read Navionics it could still be trying to load the Navionics map.
