New boat with Merc 175 Pro XS Opti break in/rpm question/issues

How a nitro Z19 with a 175 on the back. Was a leftover 18 model new when I bought it. Went on the lake for my first time to do break in and wasting able to see anything other than about 5k rpm max and 56 mph. I feel like this is low.

I do have a hot foot installed from the dealer
i checked the throttle today and noticed I had a .08” gap on the throttle arm from what I can find should be about .02. Can you guys help or think of anything to check out for me.
