    I’ll be firing up the smoker for some low n slow spare ribs, chicken wings and Mac-n-cheese. Also making baked corn casserole but it doesn’t get smoked.

    Smoked bologna yesterday. Chicken fried rice on the Blackstone today with grilled shrimp and grilled Pompano tomorrow

    We did our big cook yesterday, boneless Turkey breast wrapped in bacon and a nuce butt on the smoker. The daughter, son inlaw and grand kids are in town before he reports for sniper training. His time is limited so they will be with his folks today.

    We had 250 lbs of crayfish, bacon wrapped chicken, pork tenderloin, then all the sides, potatoes, corn on the cob, etc.

    I cut a 6lb chub in half, cubed up one half, rubbed and smoked them like burnt ends with Swamp Boys rub and sauce. Smoked the other half whole with just a rub for lunches all week. Yummy.

    15 lbs brisket. sliced up the flat, made burnt ends out of the point. 10 lbs pork shoulder too.
