Is a very steady 118 a normal running temp @4000 rpms for this motor? in 70 degree water with 80 degree air today this was what I got. Thermostats opened up fine when idling away from ramp.

Temp is fine. As long as your T stats are bringing the engine temp to around 130 degrees at idle u should be good. I was getting about that same temp yesterday while on plane. I have a 2005 200 Opti.

Idle temp should reach 120 or better.

Once on plane, thermostats are not controlling temp- the POPPET VALVE has opened a straight-through flow of water. Temps on plane will vary considerably based on load, lake water temp, and other factors.
