Something I ran across a while back was toasting your burger or whatever buns with mayo instead of butter. Granted im sure its no better for you health wise but ive done it a few times recently and it seems to create a much crispier surface..
If thats what you like I would give it a try. Im not sure its perfect for everything but works well and I was very skeptical. I think I originally saw it used for a grilled cheese but I cant remember.
Give it a whirl one day.
