Those are to keep earth from caving in on a worker(s) while they are working in a deep trench.

Would it not be considered a type of caisson? Or is a caisson only when retaining water out of a construction site?

Naww, they are trench boxes. Most Cassions are used to force water out, these do nothing but stability each side of the trench

They are trench boxes. Used for shield and shoring processes when digging trenches greater than 5’deep. They are used to prevent cave ins and side wall collapse when excavating and working in ditches.
