I just take mine to the locker and have them grind it and package it.
I've got money I haven't even spent yet!

I have gone through two of the cheaper Cabelas grinders with plastic gears. This year I bought their 1/2 hp Carnivore Grinder. It's the smallest, and cheapest, of that line but so far has worked great.
Just get an LEM. I wore out two of the cheap ones and now have an LEM and it's MUCH more quiet and night/day on quality. I think mine is 3/4 HP and it's a beast, literally grinds about 10 times faster than my old cheap one.
I have a #22 lem will grind as fast as you can feed and package it.

3/4 cabelas carnivore grinder. Love it, grind about 500lb a year and this was first year with it. No regrets
Update. Bought the Number 8 half horsepower grinder and used ti a couple days ago. Worked great. Just make sure the meat is very cold, almost frozen. I separated the meat into lugs and stored in the freezer until ready for grinding.
