1997 Stratus 201 pro elete motor backwash ?

Hello I'm a newbie here on this forum and

    I just purchaced a 1997 Stratus 201 Pro Elete.

I put a 2005, 200 hp Merc Optimax on back.

Boat has a transom Jack on it.

When I slow down (with transom Jack in high position) the rear of the boat sits so low, that the motor cowling, is 1/3 submerged in the water. (This is Very Concearning to me)

I've driven bass boats for many years, and I do throttle a bit before back wash goes over back of boat.

    Motor weighs 518 lbs.

3 deep cycle batteries with 20 gallons of gas.

Spec plate says rated for 240 hp.

Is this normal for this type of boat?

Thanks In advance for your time.

Lol, thanks, I did goose her before she settles down, definitely a must do but water is still to high on the cowling.
I know I have the wrong propeller for this boat. Hopefully a 26 pitch Trophy will improve this.
The prop I had on from my Astro was a high 5 25 pitch.
She jumped out of the water like a Jack rabbit,
