Has anyone made or know where a guy can buy knobs to replace the Allen head screws for adjusting your 360? My thought is that if I'm going to fish slop I may want to raise it up and out of the way so it's not dragging through the pads, duck weed, etc. Or is this not necessary?

That would be fine. Do they actually carry a wrench with them to take it off or is there a quick release style bolt they can use?
Do not know what they do, just saw some pictures of the 360 laying on the deck I think it was on one of the Great Lakes.
If you do it enough, you will figure out what will work.
If I needed to do it often, I would get one like this for the outside slot and just loosen the interior bolts enough to slide out:
