    Pickled Peppers

    Neighbor lady gave me a bag of orange, yellow, and red jalapeno looking peppers. I grabbed a bunch of green ones and made 15 pints of pickled peppers. Not sure how many pecks of peppers that were pickled but I was tickled put them up. Shitty picture but peppers are peppers.

    For 1 pint:

    1 garlic clove

    1 bay leaf

    1/2 tsp of kosher salt

    1/2 tsp of whole peppercorns

    1/4 tsp of coriander seed

    1/4 tsp of cumin seed

    Fill the jar with sliced peppers.

    Fill with a 50/50 hot vinegar and water mix. Leave 1/2" head space and process for 10 minutes.

    Let them set for 2 weeks.

    Been doing this for years and it's better than store bought peppers.

    Her friend has a store. But she is in the process of turning this monorail car into one. Concrete guy is going to pour a pad for it in a couple days.

    The car is from the OK state fair monorail ride that they discontinued a few years ago. Sliding doors, and when the seats and floor are removed it should work pretty well. Heavy as hell though. My other neighbor brought it in on his trailer and the two of us had a ton-o-fun unloading it without bending it. We had those pipes underneath to use as rollers.

    Thanks for sharing this recipe. Made up 5 pints a few weeks ago. Cracked open a jar tonight. My wife approved. Really good!
